When Michelin ranked Japan for the first time, its evaluation criteria had to be adapted to a unique dining landscape. Tiny 8-seat establishments were in fact a local version of gourmet dining. In Oaxaca Mexico, some sauces are so complex that they are prepared collectively by the community. While Middle Eastern spreads are a feast for the senses!
